Ingredients
- Sweet potato glass noodles (8 ounces)
- Beef sirloin, thinly sliced (8 ounces)
- Soy sauce (4 tablespoons)
- Sesame oil (3 tablespoons)
- Sugar (1 tablespoon)
- Garlic, minced (3 cloves)
- Vegetable oil (2-4 tablespoons)
- Carrots, julienned (1 cup)
- Bell pepper, sliced (1 cup)
- Onion, sliced (1 medium)
- Mushrooms, sliced (1 cup)
- Spinach, fresh (2 cups)
- Green onions, chopped (1/2 cup)
- Toasted sesame seeds (2 tablespoons)
- Salt (to taste)
- Black pepper (to taste)
Instructions
- Cook the sweet potato glass noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process, then set aside.
- In a medium bowl, combine the sliced beef with 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of sugar, and minced garlic. Mix well and let the beef marinate for at least 10 minutes to absorb all the flavors.
- Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Once hot, add the marinated beef and stir-fry until cooked through, about 3-4 minutes. Remove the beef from the pan and set aside.
- In the same pan, add more vegetable oil if necessary. Stir-fry the carrots, spinach, bell pepper, onion, and mushrooms together until they are tender-crisp, approximately 4-5 minutes.
- Add the cooked glass noodles and the stir-fried beef back into the pan. Stir-fry everything together for another 2-3 minutes until well combined and heated through.
- Season with salt and black pepper to taste, adjusting based on your preference.
- Remove the pan from heat and garnish the dish with chopped green onions and toasted sesame seeds before serving.
