Japchae
Japchae is a traditional Korean dish that captivates with its vibrant colors and rich flavors. Ingredients
- 8 ounces Sweet potato glass noodles
- 8 ounces Beef sirloin, thinly sliced
- 4 tablespoons Soy sauce
- 3 tablespoons Sesame oil

- 3 cloves Garlic, minced
- 2-4 tablespoons Vegetable oil
- 1 cup Carrots, julienned
- 1 cup Bell pepper, sliced
- 1 medium Onion, sliced
- 1 cup Mushrooms, sliced
- 2 cups Spinach, fresh
- 1/2 cup Green onions, chopped
- 2 tablespoons Toasted sesame seeds

Instructions
- Cook the sweet potato glass noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process, then set aside.
- In a medium bowl, combine the sliced beef with 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of sugar, and minced garlic. Mix well and let the beef marinate for at least 10 minutes to absorb all the flavors.
- Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Once hot, add the marinated beef and stir-fry until cooked through, about 3-4 minutes. Remove the beef from the pan and set aside.
- In the same pan, add more vegetable oil if necessary. Stir-fry the carrots, spinach, bell pepper, onion, and mushrooms together until they are tender-crisp, approximately 4-5 minutes.
- Add the cooked glass noodles and the stir-fried beef back into the pan. Stir-fry everything together for another 2-3 minutes until well combined and heated through.
- Season with salt and black pepper to taste, adjusting based on your preference.
- Remove the pan from heat and garnish the dish with chopped green onions and toasted sesame seeds before serving.
- Serve the Japchae hot and enjoy the delightful blend of flavors and textures!

- For a vegetarian version, omit the beef and add tofu or more vegetables.
