Ingredients

  • Sweet potato glass noodles (8 ounces)
  • Beef sirloin, thinly sliced (8 ounces)
  • Soy sauce (4 tablespoons)
  • Sesame oil (3 tablespoons)
  • Sugar (1 tablespoon)
  • Garlic, minced (3 cloves)
  • Vegetable oil (2-4 tablespoons)
  • Carrots, julienned (1 cup)
  • Bell pepper, sliced (1 cup)
  • Onion, sliced (1 medium)
  • Mushrooms, sliced (1 cup)
  • Spinach, fresh (2 cups)
  • Green onions, chopped (1/2 cup)
  • Toasted sesame seeds (2 tablespoons)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Cook the sweet potato glass noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process, then set aside.
  2. In a medium bowl, combine the sliced beef with 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of sugar, and minced garlic. Mix well and let the beef marinate for at least 10 minutes to absorb all the flavors.
  3. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Once hot, add the marinated beef and stir-fry until cooked through, about 3-4 minutes. Remove the beef from the pan and set aside.
  4. In the same pan, add more vegetable oil if necessary. Stir-fry the carrots, spinach, bell pepper, onion, and mushrooms together until they are tender-crisp, approximately 4-5 minutes.
  5. Add the cooked glass noodles and the stir-fried beef back into the pan. Stir-fry everything together for another 2-3 minutes until well combined and heated through.
  6. Season with salt and black pepper to taste, adjusting based on your preference.
  7. Remove the pan from heat and garnish the dish with chopped green onions and toasted sesame seeds before serving.
  8. Serve the Japchae hot and enjoy the delightful blend of flavors and textures!
