Instructions
- Preheat the oven to 400°F (200°C).
- Season the pork loin pieces with salt and pepper evenly on both sides.
- Set up a breading station: Place the flour in one shallow dish, the beaten egg in another, and the panko breadcrumbs in a third.
- Dredge each piece of pork in flour, shaking off the excess. Then dip into the beaten egg, ensuring it's fully coated. Finally, coat it with panko breadcrumbs, pressing firmly to adhere.
- In a large skillet, heat enough vegetable oil to cover the bottom over medium heat. Once hot, add the breaded pork cutlets and fry for about 3-4 minutes per side, or until golden brown and crispy.
- Transfer the fried pork cutlets to a baking sheet and bake in the preheated oven for 10 minutes to ensure they are cooked through.
- While the pork is baking, cook the ramen noodles according to the package instructions. Drain and set aside.
- In a separate pot, bring the chicken broth to a boil. Stir in the soy sauce and mirin, adjusting the seasoning to taste.
- Divide the cooked ramen noodles between two bowls. Pour the hot broth over the noodles.
- Once the pork is done, slice it into strips and place on top of the noodles.
