- 1 medium, diced Onion
- 2 medium, sliced (any color) Bell peppers
- 3 cloves, minced Garlic
- 1 can (14.5 ounces) Canned diced tomatoes
- 4 cups Chicken broth
- 1 teaspoon Cumin
- 1 tablespoon Chili powder
- 1 teaspoon Paprika

Instructions
- Heat a large pot over medium heat and add the olive oil.
- Season the chicken breasts with salt and pepper. Add them to the pot and cook until browned on both sides, about 5-7 minutes. Remove from the pot and set aside.
- In the same pot, add the sliced bell peppers, diced onion, and minced garlic. Cook for 5-6 minutes until the vegetables are softened and fragrant.
- Stir in the canned diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and pepper. Mix well to combine.
- Return the browned chicken breasts to the pot, bringing the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back to the pot, stirring to combine.
