Ingredients

  • Cooking oil (2 tablespoons)
  • Salt (to taste)
  • Red chili peppers (2-3, sliced)
  • Fresh ginger (1 inch, minced)
  • Garlic (4 cloves, minced)
  • Onion (1 medium, chopped)
  • Shrimp paste (2 tablespoons)
  • Pork belly (1 cup, diced)

  • Dried taro leaves (3 cups, packed)

Instructions

  3. Stir in the diced pork belly and cook until browned and crispy, about 5-7 minutes.
  4. Mix in the shrimp paste and cook for another 2 minutes, ensuring all the flavors meld together.
  5. Pour in the coconut milk and bring to a gentle simmer, stirring occasionally to prevent sticking.
  6. Carefully add the dried taro leaves and sliced red chili peppers. Stir well to combine, ensuring the leaves are fully submerged in the coconut milk.
  7. Cover the pot and let it simmer on low heat for about 45 minutes, or until the taro leaves are tender and the flavors have melded beautifully.
  8. Season with salt to taste before serving.
