- All-purpose flour

- Baking powder

- 1/2 cup, cold and cubed
- Granulated sugar
- 1/4 cup
- Dried lavender
- 1 tablespoon
- Milk
- 1 cup
- Honey
- 1/4 cup
- Egg
- 1
- Extra milk
- for brushing
Instructions
- Start by preheating your oven to 425°F (220°C) and lining a baking sheet with parchment paper.
- In a large bowl, combine the all-purpose flour, baking powder, and salt.
- Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Next, stir in the granulated sugar and dried lavender.
- In a separate bowl, whisk together the milk, honey, and egg.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing as it can make the scones tough.
- Lightly flour a clean surface and turn out the dough onto it. Gently knead the dough a few times until it comes together.
- Shape the dough into a circle that's approximately 1 inch thick.
- Use a sharp knife or biscuit cutter to cut the dough into 8 wedges or rounds.
- Place the scones on the prepared baking sheet. Brush the tops with a little milk for a lovely golden finish.
- Bake for 15-20 minutes, or until the scones are golden brown and cooked through.
- Allow the scones to cool slightly on the baking sheet before serving.
