Lavender and Honey Scones

Ingredients

All-purpose flour
3 cups
Baking powder
1 tablespoon
Salt
1/2 teaspoon
Unsalted butter
1/2 cup, cold and cubed
Granulated sugar
1/4 cup
Dried lavender
1 tablespoon
Milk
1 cup
Honey
1/4 cup
Egg
1
Extra milk
for brushing

Instructions

  1. Start by preheating your oven to 425°F (220°C) and lining a baking sheet with parchment paper.
  2. In a large bowl, combine the all-purpose flour, baking powder, and salt.
  3. Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Next, stir in the granulated sugar and dried lavender.
  5. In a separate bowl, whisk together the milk, honey, and egg.
  6. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing as it can make the scones tough.
  7. Lightly flour a clean surface and turn out the dough onto it. Gently knead the dough a few times until it comes together.
  8. Shape the dough into a circle that's approximately 1 inch thick.
  9. Use a sharp knife or biscuit cutter to cut the dough into 8 wedges or rounds.
  10. Place the scones on the prepared baking sheet. Brush the tops with a little milk for a lovely golden finish.
  11. Bake for 15-20 minutes, or until the scones are golden brown and cooked through.
  12. Allow the scones to cool slightly on the baking sheet before serving.
