Lemongrass Pork Lettuce Wraps

- Pork tenderloin
- 1 pound, sliced
- Lemongrass
- 2 stalks, minced

- Fish sauce
- 1 tablespoon
- Lime juice
- 2 tablespoons
- Honey
- 1 tablespoon
- Red chili flakes
- 1 teaspoon
- Lettuce leaves
- 8-10 large leaves (such as butter or romaine)
- Carrots
- 1 cup, shredded
- Cucumber
- 1 cup, thinly sliced
- Fresh cilantro
- 1/4 cup, chopped
- Roasted peanuts
- 1/4 cup, chopped
Instructions
- In a bowl, whisk together the minced lemongrass, garlic, ginger, soy sauce, fish sauce, lime juice, honey, and red chili flakes to create a flavorful marinade.
- Add the sliced pork tenderloin to the marinade, ensuring each piece is well-coated. Cover and let it marinate in the refrigerator for at least 15 minutes (or up to 2 hours for deeper flavor).
- Preheat a grill or grill pan over medium-high heat. Lightly grease the grill with oil to prevent sticking.
- Remove the pork from the marinade and grill the slices for 2-3 minutes on each side, or until they are cooked through and have a nice char.
- Once cooked, remove the pork from the grill and let it rest for a few minutes to retain its juices.
- To assemble the wraps, lay out the lettuce leaves on a serving platter. Place a spoonful of shredded carrots and a few slices of cucumber on each leaf.
- Top with several slices of grilled pork, then garnish with fresh cilantro and chopped roasted peanuts.
