Ingredients
- Russet potatoes (4 large)
- Olive oil (2 tablespoons)
- Salt (1 teaspoon, or to taste)
- Cheddar cheese (1.5 cups, shredded)
- Bacon (6 slices, cooked and crumbled)
- Green onions (4 stalks, sliced)
- Sour cream (1 cup)
Instructions
- Preheat your oven to 400°F (200°C).
- Thoroughly wash and dry the russet potatoes. Then, use a fork to prick each potato a few times. This helps steam escape during baking.
- Rub each potato evenly with the olive oil and salt. This will give you a crisp, flavorful skin.
- Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until they are cooked through with crispy skins.
- Remove the potatoes from the oven and let them cool for a few minutes until they are safe to handle.
- Cut the potatoes in half lengthwise. Carefully scoop out most of the potato flesh, leaving a shell of about 1/4 inch of flesh attached to the skin. Be sure not to scoop too much; you want the skins to hold their shape.
- Place the potato skins on a baking sheet. Sprinkle the insides with the shredded cheddar cheese and crispy crumbled bacon.
- Bake the potato skins for an additional 10 minutes, or until the cheese is bubbly and golden.
- Remove the potato skins from the oven and immediately top with the sliced green onions. Serve hot, with sour cream on the side for dipping.
