Instructions
- Bring a large pot of water to a boil. Add the lobster tails and cook for 5-7 minutes, until the shells turn bright red. Remove the lobster tails from the water and let them cool. Once cooled, remove the meat from the shells and chop into bite-sized pieces.
- In a large soup pot, melt the butter over medium heat. Add the diced onion, minced garlic, diced carrot, and diced celery. Cook until the vegetables are softened, about 5 minutes.
- Sprinkle the flour over the cooked vegetables and stir to coat evenly. Cook for 1-2 minutes to eliminate the raw flour taste.
- Slowly pour in the chicken broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for 10 minutes, allowing it to thicken slightly.
- Add the chopped lobster meat to the pot and cook for an additional 5 minutes, allowing the flavors to meld.
- Stir in the heavy cream and chopped parsley. Season generously with salt and pepper to taste.
- Simmer the soup for another 5 minutes, until heated through and creamy.
- Serve hot, garnished with additional parsley if desired, and enjoy the luxurious flavors.
Tips
- For an extra layer of flavor, consider adding a splash of sherry or white wine after sautéing the vegetables.
- If you prefer a thicker soup, you can blend part of the soup and then return it to the pot before adding the lobster.
- This soup pairs well with crusty bread or a fresh green salad for a complete meal.
