Luxurious Mango Mousse

Ingredients
- Ripe mangoes
- 2 large, peeled and diced
- Granulated sugar
- 2 tablespoons
- Lemon juice
- 1 tablespoon, freshly squeezed
- Gelatin
- 1 tablespoon
- Cold water
- 3 tablespoons
- Whipping cream
- 1 cup
- Powdered sugar
- 2 tablespoons
- Vanilla extract
- 1 teaspoon
- Fresh mango slices
- for garnish
Instructions
- In a blender or food processor, puree the diced mangoes until smooth and set aside.
- In a small saucepan, combine the granulated sugar and lemon juice. Heat over medium heat, stirring until the sugar is completely dissolved.
- In a separate small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- Once bloomed, gently heat the gelatin mixture in the microwave for about 10-15 seconds or until it becomes liquid. Add the bloomed gelatin to the warm sugar mixture and stir until completely dissolved.
- In a large mixing bowl, whip the whipping cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
- Gently fold the mango puree into the whipped cream mixture until well combined, being careful not to deflate the whipped cream.
- Divide the mango mousse mixture into serving glasses or bowls, smoothing the tops with a spatula.
- Refrigerate for at least 2 hours, or until the mousse is set and firm to the touch.
- Serve chilled, garnished with fresh mango slices for an extra pop of color and flavor.
Tips
- For a twist, you can add a splash of coconut milk to the mango puree for a tropical flair.
- If you prefer a vegan version, substitute gelatin with agar-agar and use coconut cream instead of whipping cream.
