Servings: 4

Ingredients

Ripe mangoes
2 large, peeled and diced
Granulated sugar
2 tablespoons
Lemon juice
1 tablespoon, freshly squeezed
Gelatin
1 tablespoon
Cold water
3 tablespoons
Whipping cream
1 cup
Powdered sugar
2 tablespoons
Vanilla extract
1 teaspoon
Fresh mango slices
for garnish

Instructions

  1. In a blender or food processor, puree the diced mangoes until smooth and set aside.
  2. In a small saucepan, combine the granulated sugar and lemon juice. Heat over medium heat, stirring until the sugar is completely dissolved.
  3. In a separate small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
  4. Once bloomed, gently heat the gelatin mixture in the microwave for about 10-15 seconds or until it becomes liquid. Add the bloomed gelatin to the warm sugar mixture and stir until completely dissolved.
  5. In a large mixing bowl, whip the whipping cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
  6. Gently fold the mango puree into the whipped cream mixture until well combined, being careful not to deflate the whipped cream.
  7. Divide the mango mousse mixture into serving glasses or bowls, smoothing the tops with a spatula.
  8. Refrigerate for at least 2 hours, or until the mousse is set and firm to the touch.
  9. Serve chilled, garnished with fresh mango slices for an extra pop of color and flavor.
