Servings: 8

Ingredients

  • Milk (1 cup)
  • Vanilla extract (1 teaspoon)
  • Eggs (2 large)
  • Granulated sugar (1 cup)
  • Unsalted butter, softened (1/2 cup)
  • Salt (1/4 teaspoon)
  • Baking powder (1 teaspoon)
  • Matcha green tea powder (2 tablespoons)
  • All-purpose flour (2 cups)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9-inch cake pan and line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, matcha green tea powder, baking powder, and salt. This will be your dry mixture.
  3. In a large bowl, using an electric mixer, beat the softened unsalted butter and granulated sugar until the mixture is light and fluffy.
  4. Beat in the eggs into the butter-sugar mixture, one at a time, ensuring each egg is incorporated before adding the next. Stir in the vanilla extract.
  5. Gradually add the dry mixture to the wet mixture, alternating with the milk. Start and end with the dry mixture. Mix until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  7. Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, it's ready to be sliced and served.
