Servings: 4

Ingredients

Corn on the cob
4 ears, husked and silk removed
Mayonnaise
1/4 cup
Sour cream
1/4 cup
Lime juice
2 tablespoons, freshly squeezed
Chili powder
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Cotija cheese
1/2 cup, crumbled
Fresh cilantro
1/4 cup, chopped for garnish

Instructions

  1. Preheat the grill to medium-high heat, ensuring the grates are clean for the corn.
  2. Husk the corn, removing both the outer leaves and silk strands for a clean grilling experience.
  3. Place the corn directly on the grill and cook for about 10-12 minutes, turning occasionally until the corn is lightly charred and tender.
  4. While the corn is grilling, prepare the creamy sauce by combining mayonnaise, sour cream, lime juice, chili powder, salt, and black pepper in a small bowl. Mix until smooth and well combined.
  5. Once the corn is grilled, remove it from the grill and brush the creamy sauce generously over each ear of corn, making sure to coat it evenly.
  6. Sprinkle crumbled Cotija cheese and chopped cilantro over the sauced corn, allowing the flavors to meld.
  7. Serve immediately, garnished with additional lime wedges and chili powder if desired, and enjoy the burst of flavors!
