Ingredients
- Mutton (1 kg, cut into pieces)
- Oil (4 tablespoons)
- Salt (to taste)
- Garam masala powder (1 teaspoon)
- Cumin powder (1 teaspoon)
- Coriander powder (1 teaspoon)
- Kashmiri red chili powder (2 tablespoons)
- Bay leaf (1)
- Cinnamon stick (1)
- Cloves (4)
- Green cardamom (4)
- Garlic (6 cloves, minced)
- Ginger (1-inch piece, grated)
- Onion (2 large, finely chopped)
- Tomatoes (2 large, chopped)
- Yogurt (1 cup, beaten)
- Fresh coriander leaves (for garnish)
- Water (2 cups)
Instructions
- In a pressure cooker or heavy-bottomed pan, heat the oil over medium heat.
- Add the green cardamom, cloves, cinnamon stick, and bay leaf. Fry for a few seconds until fragrant.
- Stir in the chopped onions and sauté until they turn golden brown.
- Add the grated ginger and minced garlic. Fry for an additional minute until aromatic.
- Incorporate the chopped tomatoes and cook until they become soft and mushy.
- Add the Kashmiri red chili powder, coriander powder, cumin powder, and garam masala powder. Sauté for a minute to release the spices' flavors.
- Introduce the mutton pieces, stirring to coat them in the spice mixture. Fry for 5-7 minutes until the mutton is browned.
- Pour in the beaten yogurt and add salt. Mix thoroughly and cook for another 5-7 minutes.
- Add 2 cups of water, cover the cooker, and pressure cook for 4-5 whistles, or alternatively, cook on low flame for 45-50 minutes until the mutton is tender.
- Once cooked, garnish with fresh coriander leaves. Serve hot with steamed rice or naan.
