Chole Bhature
Chole Bhature, a mouth-watering North Indian delicacy, is the perfect blend of a spicy chickpea curry and deep-fried fluffy bread called Bhature. This dish, originating from the vibrant state of Punjab, is a celebration of flavors that promises to delight your palate. Ingredients
- 2 cups, soaked overnight Chickpeas
- to taste Salt
- 2 tablespoons Oil
- 2, finely chopped Onions
- 1 inch piece, grated Ginger
- 4 cloves, minced Garlic
- 2, finely chopped Green chili
- 2, pureed Tomatoes
- 1 teaspoon Coriander powder
- 1 teaspoon Cumin powder
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chili powder
- 1 teaspoon Garam masala
- 2 cups All-purpose flour
- 1 cup Yogurt
- 1 teaspoon Baking powder
- 1 teaspoon Sugar
- 1 teaspoon Salt for dough
- as required Oil for deep frying

Instructions
- Cook the soaked chickpeas with salt in a pressure cooker until tender. Set aside.
- Heat oil in a pan. Add onions and sauté until golden brown.
- Add grated ginger, minced garlic, and chopped green chilies. Sauté for a minute.
- Add the pureed tomatoes. Cook until the oil separates from the mixture.
- Add coriander powder, cumin powder, turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Add the cooked chickpeas. Simmer the mixture for 10 minutes.
- In a separate bowl, combine all-purpose flour, yogurt, baking powder, sugar, and salt. Knead to form a soft dough.
- Cover the dough and let it rest for 30 minutes.
- Divide the dough into small balls. Roll each ball into flat discs.
- Heat oil in a deep pan. Deep fry the Bhature until they puff up and turn golden brown.
- Serve the hot Bhature with the flavorful Chole and relish this traditional Indian delicacy.
Tips
- For a healthier variation, you can use whole wheat flour instead of all-purpose flour for the Bhature. If you like your Chole spicier, feel free to add more red chili powder or green chilies.
