Ingredients

Original recipe serves 4

Chickpeas
2 cups, soaked overnight
Salt
to taste
Oil
2 tablespoons
Onions
2, finely chopped
Ginger
1 inch piece, grated
Garlic
4 cloves, minced
Green chili
2, finely chopped
Tomatoes
2, pureed
Coriander powder
1 teaspoon
Cumin powder
1 teaspoon
Turmeric powder
1/2 teaspoon
Red chili powder
1 teaspoon
Garam masala
1 teaspoon
All-purpose flour
2 cups
Yogurt
1 cup
Baking powder
1 teaspoon
Sugar
1 teaspoon
Salt for dough
1 teaspoon
Oil for deep frying
as required

Instructions

  1. Cook the soaked chickpeas with salt in a pressure cooker until tender. Set aside.
  2. Heat oil in a pan. Add onions and sauté until golden brown.
  3. Add grated ginger, minced garlic, and chopped green chilies. Sauté for a minute.
  4. Add the pureed tomatoes. Cook until the oil separates from the mixture.
  5. Add coriander powder, cumin powder, turmeric powder, red chili powder, garam masala, and salt. Mix well.
  6. Add the cooked chickpeas. Simmer the mixture for 10 minutes.
  7. In a separate bowl, combine all-purpose flour, yogurt, baking powder, sugar, and salt. Knead to form a soft dough.
  8. Cover the dough and let it rest for 30 minutes.
  9. Divide the dough into small balls. Roll each ball into flat discs.
  10. Heat oil in a deep pan. Deep fry the Bhature until they puff up and turn golden brown.
  11. Serve the hot Bhature with the flavorful Chole and relish this traditional Indian delicacy.

Tips

  • 💡 For a healthier variation, you can use whole wheat flour instead of all-purpose flour for the Bhature. If you like your Chole spicier, feel free to add more red chili powder or green chilies.
