Ingredients
- Potatoes (2 pounds, peeled and cubed)
- Unsalted butter (4 tablespoons, melted)
- Egg yolks (3 large)
- Salt (1 teaspoon, or to taste)
- Ground black pepper (1/2 teaspoon, or to taste)
- Nutmeg (1/4 teaspoon, freshly grated)
- Parmesan cheese (1/2 cup, grated)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Mash the potatoes until smooth and free of lumps.
- In a separate bowl, mix the melted butter, egg yolks, salt, black pepper, and nutmeg together. Gradually add this mixture to the mashed potatoes, stirring until fully combined and creamy.
- Transfer the mashed potato mixture to a piping bag fitted with a star tip.
- On a baking sheet lined with parchment paper, pipe the mashed potatoes into small mounds, about 2 inches apart.
- Generously sprinkle the grated Parmesan cheese over the piped potatoes.
- Bake in the preheated oven for 10-12 minutes, or until the tops are golden brown and crispy.
