Potatoes
2 pounds, peeled and cubed
Unsalted butter
4 tablespoons, melted
Egg yolks
3 large
Salt
1 teaspoon, or to taste
Ground black pepper
1/2 teaspoon, or to taste
Nutmeg
1/4 teaspoon, freshly grated
Parmesan cheese
1/2 cup, grated

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot. Mash the potatoes until smooth and free of lumps.
  4. In a separate bowl, mix the melted butter, egg yolks, salt, black pepper, and nutmeg together. Gradually add this mixture to the mashed potatoes, stirring until fully combined and creamy.
  5. Transfer the mashed potato mixture to a piping bag fitted with a star tip.
  6. On a baking sheet lined with parchment paper, pipe the mashed potatoes into small mounds, about 2 inches apart.
  7. Generously sprinkle the grated Parmesan cheese over the piped potatoes.
  8. Bake in the preheated oven for 10-12 minutes, or until the tops are golden brown and crispy.
