Papas Duquesas

Papas Duquesas, also known as Duchess Potatoes, are a classic French side dish made with mashed potatoes, egg yolks, and butter.

Ingredients

  • Parmesan cheese (1/4 cup, grated)
  • Nutmeg (1/4 teaspoon)
  • Ground black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Egg yolks (2)
  • Butter (1/2 cup, melted)
  • Potatoes (2 pounds, peeled and cubed)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot. Mash the potatoes until smooth.
  4. Add the melted butter, egg yolks, salt, black pepper, and nutmeg to the mashed potatoes. Mix well to combine.
  5. Transfer the mashed potatoes to a piping bag fitted with a star tip.
  6. Pipe the mashed potatoes onto a baking sheet lined with parchment paper, forming small mounds.
  7. Sprinkle the grated Parmesan cheese over the piped mashed potatoes.
  8. Bake in the preheated oven for 10-12 minutes, or until the Papas Duquesas are golden and crispy.
  9. Serve hot as a delicious side dish.
