Ingredients

Potatoes
4 large
Ground beef
1 pound
Garlic
2 cloves, minced
Onion
1 medium, chopped
Cumin
1 teaspoon
Paprika
1 teaspoon
Salt
to taste
Pepper
to taste
Egg
1, beaten
Breadcrumbs
1 cup
Vegetable oil
enough for deep frying

Instructions

  1. Boil the potatoes in a large pot until they are tender and easily pierced with a fork. Drain and let them cool.
  2. Once cooled, peel the potatoes and mash them until smooth. Set aside.
  3. In a skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is thoroughly browned and the onion is translucent.
  4. Season the beef mixture with cumin, paprika, salt, and pepper. Mix well to ensure the flavors are evenly distributed.
  5. Take a portion of the mashed potatoes and flatten it in your hand. Place a spoonful of the beef mixture in the center and shape the potato around the filling, forming a ball.
  6. Repeat the process with the remaining mashed potatoes and beef filling.
  7. Dip each potato ball into the beaten egg, then roll it in the breadcrumbs to coat.
  8. Heat the vegetable oil in a deep pan or fryer to 350°F (175°C).
  9. Fry the potato balls in batches until they are golden brown and crispy, about 3-4 minutes per batch.
  10. Remove the Papas Rellenas from the oil using a slotted spoon and drain on paper towels.
