Pochero
Pochero is a beloved Filipino stew that embodies the warmth and heart of home cooking. - 2 leaves Bay leaf
- 2 cups Tomato sauce
- 1 large, chopped Onion
- 4 cloves, minced Garlic
- 2 medium, chopped Carrots
- 2 large, cubed Potatoes
- 1 pound, cut into chunks Pork (shoulder or belly)
- 1 pound, cut into chunks Beef (chuck or brisket)
- 4 cups Water

Instructions
- In a large pot, heat a little oil over medium heat. Sauté the chopped onion and minced garlic until fragrant and the onion is translucent.
- Add the pork and beef chunks to the pot, browning them on all sides.
- Pour in the tomato sauce and water, then add the bay leaves, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot and let it cook for about 1 hour.
- After an hour, add the cubed potatoes and chopped carrots to the pot. Stir gently to combine.
- Continue to simmer for another 30 minutes, or until the meat and vegetables are tender and the flavors meld together.
- Taste and adjust the seasoning with more salt and pepper if needed.
- Serve hot, accompanied by steamed rice, allowing the delicious sauce to soak into the rice.
