Poffertjes

Poffertjes are small Dutch pancakes that are fluffy and delicious. They are traditionally served with powdered sugar and butter.

Ingredients

  • Butter (for serving)
  • Powdered sugar (for dusting)
  • Butter (2 tablespoons, melted)
  • Milk (1 cup)
  • Egg (1)
  • Salt (1/4 teaspoon)
  • Sugar (2 tablespoons)
  • Baking powder (1 teaspoon)
  • All (purpose flour - 1 cup)

Instructions

  1. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, beat the egg and then add the milk and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Preheat a poffertjes pan or a small non-stick skillet over medium heat. Grease the pan with butter or cooking spray.
  5. Fill each indentation of the pan with batter, about halfway full.
  6. Cook for about 2-3 minutes, or until the edges start to set and bubbles form on the surface.
  7. Flip each poffertje using a skewer or a small fork and cook for an additional 2-3 minutes, or until golden brown and cooked through.
  8. Transfer the cooked poffertjes to a serving plate and repeat the process with the remaining batter.
  9. Serve the poffertjes warm, dusted with powdered sugar and topped with a pat of butter.
