Ingredients

Tomatoes
4 medium, diced
Fresh basil leaves
1 cup, chopped
Chicken breasts
4, boneless and skinless

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium heat until shimmering.
  4. Add the seasoned chicken breasts to the skillet and cook for about 5 minutes on each side, or until they are golden brown.
  5. Remove the browned chicken from the skillet and set aside on a plate.
  6. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  7. Stir in the diced tomatoes and cook for 5 minutes, or until they soften and release their juices.

  11. Remove from the oven and let rest for a few minutes before serving. Garnish with additional fresh basil leaves.
