
Potage aux Legumes
Potage aux Legumes is a hearty and flavorful vegetable soup made with a variety of fresh vegetables.
Ingredients
- Fresh parsley (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Thyme (1 teaspoon)
- Bay leaf (1)
- Vegetable broth (6 cups)
- Tomatoes (2, diced)
- Corn (1 cup)
- Peas (1 cup)
- Green beans (1 cup, chopped)
- Garlic (2 cloves, minced)
- Onion (1, diced)
- Celery (2 stalks, diced)
- Potatoes (2, diced)
- Carrots (2, diced)
Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is translucent.
- Add the diced carrots, potatoes, celery, green beans, peas, corn, and tomatoes. Stir well.
- Pour in the vegetable broth and add the bay leaf and thyme. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes, or until the vegetables are tender.
- Remove the bay leaf and discard.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Return the soup to the pot and heat over low heat until warmed through.
- Serve hot, garnished with fresh parsley.
