Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the fish fillets with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and red bell pepper. Sauté for about 5-7 minutes, or until the vegetables are tender and the onion is translucent.
  4. Add the minced garlic to the skillet and cook for an additional minute, stirring frequently to prevent burning.
  5. Stir in the canned diced tomatoes, tomato paste, vegetable broth, bay leaf, dried oregano, and additional salt and pepper to taste. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, allowing the flavors to meld.
  6. Place the seasoned fish fillets in a baking dish and pour the tomato sauce over them, ensuring the fish is well covered.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  8. After 20 minutes, remove the foil and continue baking for another 10 minutes, or until the fish is cooked through and flakes easily with a fork.
  9. Once done, remove from the oven and discard the bay leaf. Garnish with freshly chopped parsley before serving.
