- Fish fillets (such as cod or haddock)
- 4 (6-ounce) fillets
- Fresh parsley

Instructions
- Preheat the oven to 375°F (190°C).
- Season the fish fillets with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and red bell pepper. Sauté for about 5-7 minutes, or until the vegetables are tender and the onion is translucent.
- Add the minced garlic to the skillet and cook for an additional minute, stirring frequently to prevent burning.
- Stir in the canned diced tomatoes, tomato paste, vegetable broth, bay leaf, dried oregano, and additional salt and pepper to taste. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, allowing the flavors to meld.
- Place the seasoned fish fillets in a baking dish and pour the tomato sauce over them, ensuring the fish is well covered.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- After 20 minutes, remove the foil and continue baking for another 10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Once done, remove from the oven and discard the bay leaf. Garnish with freshly chopped parsley before serving.
