Ingredients
- Fresh parsley (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Dried oregano (1 teaspoon)
- Bay leaf (1)
- Vegetable broth (1 cup)
- Tomato paste (2 tablespoons)
- Canned diced tomatoes (1 can (14 oz))
- Garlic (3 cloves, minced)
- Red bell pepper (1, diced)
- Celery (2 stalks, diced)
- Carrots (2 medium, diced)
- Onion (1 large, finely chopped)
- Fish fillets (4 pieces)
Instructions
- Preheat the oven to 375°F (190°C).
- Season the fish fillets with salt and pepper.
- In a large skillet, heat some olive oil over medium heat.
- Add the chopped onion, carrots, celery, and red bell pepper. Sauté until the vegetables are tender.
- Add the minced garlic and cook for another minute.
- Stir in the canned diced tomatoes, tomato paste, vegetable broth, bay leaf, dried oregano, salt, and pepper. Simmer for 10 minutes.
- Place the fish fillets in a baking dish and pour the tomato sauce over them.
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through.
- Garnish with fresh parsley before serving.
