
Rye Bread with Quark
This hearty rye bread is made with quark, a type of fresh cheese, for a unique and delicious flavor.
Ingredients
- Caraway seeds (1 tablespoon)
- Salt (1 teaspoon)
- Active dry yeast (1 packet)
- Warm water (1 cup)
- Quark (1 cup)
- All (purpose flour - 1 cup)
- Rye flour (3 cups)
Instructions
- In a large bowl, combine the rye flour, all-purpose flour, and salt.
- In a separate bowl, dissolve the yeast in the warm water and let sit for 5 minutes.
- Add the yeast mixture and quark to the flour mixture and stir until a dough forms.
- Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour, or until doubled in size.
- Preheat the oven to 375°F and grease a loaf pan.
- Punch down the dough and shape it into a loaf. Place it in the prepared pan and sprinkle the top with caraway seeds.
- Bake for about 1 hour, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Let the bread cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
