Servings: 6-8
Ingredients
- Chicken pieces
- 4 lbs (legs, thighs, or breasts)
- Buttermilk
- 2 cups
- Hot sauce
- 1/2 cup
- All-purpose flour
- 2 cups
- Cornstarch
- 1/2 cup
- Paprika
- 2 tablespoons
- Cayenne pepper
- 1 tablespoon (adjust for spice preference)
- Garlic powder
- 1 tablespoon
- Salt
- 1 tablespoon
- Black pepper
- 1 teaspoon
- Vegetable oil
- for frying (about 4 cups)
Instructions
- In a large mixing bowl, whisk together the buttermilk and hot sauce until well combined.
- Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour, ideally overnight to maximize flavor and tenderness.
- In a separate bowl, combine the all-purpose flour, cornstarch, paprika, cayenne pepper, garlic powder, salt, and black pepper until evenly blended.
- Remove the chicken pieces from the buttermilk marinade, allowing any excess to drip off. Dredge each piece in the flour mixture, pressing firmly to adhere and create a thick coating.
- In a deep skillet or Dutch oven, heat vegetable oil to 350°F (175°C). Carefully place the chicken pieces in the hot oil, working in batches to avoid overcrowding.
- Fry the chicken for about 12-15 minutes, turning occasionally, until golden brown and the internal temperature reaches 165°F (74°C).
- Once cooked, transfer the fried chicken to a wire rack or a paper towel-lined plate to drain excess oil.
- Serve hot with extra hot sauce on the side for dipping and enjoy your perfectly crispy and spicy fried chicken!
