Servings: 4
Ingredients
- Pasta (8 ounces (spaghetti or your choice))
- Fresh spinach (2 cups, packed)
- Basil leaves (1 cup, packed)
- Garlic (2 cloves)
- Pine nuts (1/4 cup)
- Parmesan cheese (1/2 cup, grated)
- Olive oil (1/3 cup, plus more for cooking)
- Salt (to taste)
- Black pepper (to taste)
Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving about 1/2 cup of the pasta water.
- In a food processor, combine the spinach, basil leaves, garlic, Parmesan cheese, pine nuts, olive oil, salt, and pepper. Blend until smooth to create a vibrant pesto sauce. If the sauce is too thick, add a little reserved pasta water to achieve your desired consistency.
- In a large pan, heat a tablespoon of olive oil over medium heat. Add the cooked pasta and toss to coat in the oil.
- Pour the freshly made pesto sauce over the pasta and stir until the pasta is evenly coated. If needed, add more reserved pasta water to help the sauce adhere.
- Cook for an additional 2-3 minutes, tossing gently until the spinach wilts slightly and the pasta is heated through.
- Serve hot, garnished with extra Parmesan cheese and a sprinkle of black pepper for added flavor.
