Ingredients

Pasta
8 ounces (spaghetti or your choice)
Fresh spinach
2 cups, packed
Basil leaves
1 cup, packed
Garlic
2 cloves
Pine nuts
1/4 cup
Parmesan cheese
1/2 cup, grated
Olive oil
1/3 cup, plus more for cooking
Salt
to taste
Black pepper
to taste

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving about 1/2 cup of the pasta water.
  2. In a food processor, combine the spinach, basil leaves, garlic, Parmesan cheese, pine nuts, olive oil, salt, and pepper. Blend until smooth to create a vibrant pesto sauce. If the sauce is too thick, add a little reserved pasta water to achieve your desired consistency.
  3. In a large pan, heat a tablespoon of olive oil over medium heat. Add the cooked pasta and toss to coat in the oil.
  4. Pour the freshly made pesto sauce over the pasta and stir until the pasta is evenly coated. If needed, add more reserved pasta water to help the sauce adhere.
  5. Cook for an additional 2-3 minutes, tossing gently until the spinach wilts slightly and the pasta is heated through.
  6. Serve hot, garnished with extra Parmesan cheese and a sprinkle of black pepper for added flavor.
