Ingredients

Original recipe serves 4

Chicken broth
4 cups
Galangal
2 inches, thinly sliced
Lemongrass
2 stalks, smashed and cut into 2-inch pieces
Kaffir lime leaves
6, torn
Chicken breast
1 pound, thinly sliced
Mushrooms
1 cup, sliced
Coconut milk
2 cups
Thai chili peppers
2-3, crushed
Fish sauce
2 tablespoons
Lime juice
3 tablespoons
Salt
to taste
Cilantro
for garnish

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the galangal, lemongrass, and kaffir lime leaves to the pot. Reduce the heat and let it simmer for 10 minutes to extract the flavors of the herbs.
  3. Add the sliced chicken and mushrooms to the pot. Cook until the chicken is no longer pink, about 5-7 minutes.
  4. Stir in the coconut milk, crushed Thai chili peppers, fish sauce, and lime juice. Let the soup simmer for another 5 minutes.
  5. Taste the soup. If necessary, add salt to taste.
  6. Before serving, remove the galangal, lemongrass, and kaffir lime leaves.
  7. Serve the soup hot, garnished with fresh cilantro.

Tips

  • 💡 For a vegetarian variation, replace the chicken with tofu and use vegetable broth instead of chicken broth.
  • 💡 If you can't find galangal, you may substitute it with ginger, though it has a slightly different flavor.
