Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, rolled oats, finely chopped onion, minced garlic, chopped red bell pepper, grated carrot, cumin, paprika, salt, and black pepper to the bowl. Mix well until fully combined.
- Form the mixture into four patties, ensuring they hold together, and place them on a baking sheet lined with parchment paper.
- Bake the patties in the preheated oven for 15-20 minutes, or until they are firm and golden brown, flipping halfway through for even cooking.
- While the patties are baking, prepare the sauce by mixing together the mayonnaise, ketchup, and mustard in a small bowl. Adjust seasoning to taste.
