Ingredients

Wild boar sausages
1 pound
Olive oil
2 tablespoons
Onions
1 large, diced
Garlic
4 cloves, minced
Red wine
1 cup
Tomato paste
2 tablespoons
Fresh rosemary
2 tablespoons, chopped
Salt
1 teaspoon
Black pepper
1/2 teaspoon

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the wild boar sausages to the skillet and cook them until browned on all sides, about 10 minutes. Remove the sausages from the skillet and set them aside on a plate.
  3. In the same skillet, add the diced onions and minced garlic. Sauté until the onions are softened and translucent, about 5 minutes.
  4. Pour in the red wine, using a wooden spoon to scrape up any browned bits from the bottom of the skillet, as this will add depth to the sauce.
  5. Stir in the tomato paste to thicken the sauce, followed by the chopped rosemary, salt, and pepper. Allow the mixture to simmer for a few minutes until it thickens slightly.
  6. Return the browned sausages to the skillet, ensuring they are coated with the sauce. Cover and let the sausages simmer for 30 minutes, or until they are cooked through and infused with the flavors of the sauce.
  7. Serve the wild boar sausages hot, spooning the rich onion and wine sauce over the top.
