2 large, mashed
Egg
1 large
Milk
1/2 cup
Vanilla extract
1 teaspoon
All-purpose flour
1 cup
Baking powder
1 tablespoon
Cinnamon

1 cup, for serving
Maple syrup

Instructions

  1. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  2. Add the egg, milk, and vanilla extract to the mashed bananas. Mix well until fully combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon until well combined.
  4. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Preheat the air fryer to 350°F (175°C) for about 5 minutes.
  6. Lightly grease the air fryer basket with cooking spray or a small amount of oil to prevent sticking.
  7. Scoop about 1/4 cup of the pancake batter onto the greased air fryer basket, spacing them apart to allow for expansion.
  8. Cook the pancakes in the air fryer for 5 minutes. Carefully flip them over and cook for an additional 3-5 minutes, or until they are golden brown and cooked through.
