Servings: 4

Ingredients

Cooking spray
as needed
Paprika
1 teaspoon
Garlic powder
1 teaspoon
Black pepper
1/2 teaspoon
Salt
1/2 teaspoon
Breadcrumbs
1 cup
Shredded coconut
1 cup, unsweetened
Coconut milk
1 cup
Chicken breasts
4, boneless and skinless

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a shallow dish, whisk together the coconut milk, salt, black pepper, garlic powder, and paprika until well combined.
  3. In another shallow dish, combine the shredded coconut and breadcrumbs, mixing them thoroughly for an even coating.
  4. Dip each chicken breast into the coconut milk mixture, allowing any excess to drip off, then coat it with the coconut breadcrumb mixture. Press gently to ensure the coating adheres well.
  5. Spray the air fryer basket with cooking spray to prevent sticking.
  6. Place the coated chicken breasts in the air fryer basket in a single layer, ensuring they are not overcrowded.
  7. Cook for 10 minutes, then carefully flip the chicken breasts and cook for an additional 8-10 minutes, or until they are golden brown and cooked through (internal temperature should reach 165°F / 74°C).
  8. Serve hot with a zesty dipping sauce such as sweet chili sauce or a tangy mango salsa.
