Serves 4

Ingredients

Water
2 cups
Rolled oats
1 cup
Dried apricots
1 cup, chopped
Cinnamon
1 teaspoon
Vanilla extract
1 teaspoon
Butter
2 tablespoons, melted
Oat flour
1/2 cup
Brown sugar
1/4 cup
Honey
to taste, for drizzling

Instructions

  1. In a saucepan, bring 2 cups of water to a boil.
  2. Add the rolled oats, chopped dried apricots, cinnamon, and vanilla extract to the boiling water.
  3. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the oats are cooked through and the apricots are soft.
  4. While the oatmeal is cooking, prepare the oat topping by mixing together oat flour, brown sugar, and melted butter in a small bowl until crumbly.
  5. Once the oatmeal is cooked, divide it into serving bowls and generously sprinkle the oat topping over each bowl.
  6. Place the bowls under the broiler for 2-3 minutes, watching closely, until the oat topping is golden brown and crispy.
  7. Carefully remove the bowls from the oven and let them cool for a few minutes.
  8. Drizzle honey over the top of each bowl for added sweetness and flavor before serving.

Tips

  • 💡 For a nutty flavor, consider adding a handful of chopped nuts such as almonds or walnuts to the oat topping.
  • 💡 You can substitute honey with maple syrup or agave nectar for a different sweetness profile.
  • 💡 Try adding a pinch of salt to enhance the flavors of the oatmeal.
