Ingredients
- Apricots
- 6 cups, halved and pitted
- Granulated sugar
- 1/2 cup, divided
- Cornstarch
- 2 tablespoons
- Lemon juice
- 1 tablespoon
- All-purpose flour
- 1 cup
- Baking powder
- 1 teaspoon
- Salt
- 1/4 teaspoon
- Unsalted butter
- 1/2 cup, cold and cubed
- Milk
- 1/2 cup
- Vanilla extract
- 1 teaspoon
- Vanilla ice cream
- for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the halved apricots, 1/4 cup of granulated sugar, cornstarch, and lemon juice. Toss gently until the apricots are evenly coated. Transfer the apricot mixture to a 9-inch tart pan, spreading it out evenly.
- In another bowl, whisk together the flour, baking powder, remaining 1/4 cup of sugar, and salt.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the milk and vanilla extract, stirring gently until just combined. Be careful not to overmix to keep the cobbler topping light and fluffy.
- Drop spoonfuls of the cobbler dough over the apricot mixture in the tart pan, ensuring that some apricots are still visible for a beautiful presentation.
- Bake in the preheated oven for 35-40 minutes, or until the cobbler topping is golden brown and the apricot filling is bubbling around the edges.
- Remove from the oven and allow the tart to cool for a few minutes. Serve warm with a generous scoop of vanilla ice cream on top.
Tips
- For a twist, consider adding a sprinkle of cinnamon or nutmeg to the apricot mixture for added warmth.
- Feel free to substitute apricots with other seasonal fruits like peaches or cherries for a different flavor profile.
- This tart can be made ahead of time and reheated in the oven for a few minutes before serving.
