
Apricot Crisp Fried Rice
This unique twist on fried rice combines the sweetness of apricots with the savory flavors of crispy rice and vegetables.
Ingredients
- Salt and pepper (to taste)
- Vegetable oil (2 tablespoons)
- Eggs (2, beaten)
- Ginger (1 teaspoon, grated)
- Garlic (2 cloves, minced)
- Sesame oil (1 tablespoon)
- Soy sauce (2 tablespoons)
- Green onions (4, chopped)
- Peas (1/2 cup)
- Carrots (1/2 cup, diced)
- Apricots (1 cup, diced)
- Cooked rice (4 cups)
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add garlic and ginger, and sauté for 1 minute until fragrant.
- Add carrots and peas, and cook for 2-3 minutes until slightly tender.
- Push the vegetables to one side of the skillet and pour beaten eggs into the other side.
- Scramble the eggs until cooked through, then mix with the vegetables.
- Add cooked rice, diced apricots, green onions, soy sauce, and sesame oil to the skillet.
- Stir-fry for 5-7 minutes until the rice is heated through and slightly crispy.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
