Instructions
- In a mixing bowl, combine the diced apricots, granulated sugar, lemon juice, and ground cinnamon. Mix well and set aside to allow the flavors to meld.
- In another bowl, mix the all-purpose flour, brown sugar, diced cold butter, vanilla extract, and salt. Use your fingers or a pastry cutter to combine until the mixture resembles coarse crumbs.
