Mediterranean Artichoke and Feta Omelette

Olive oil
1 tablespoon
Black pepper
1/4 teaspoon, freshly ground
Salt
1/4 teaspoon
Fresh spinach
1 cup, roughly chopped
Feta cheese
1/2 cup, crumbled
Artichoke hearts
1 cup, drained and chopped
Eggs
4, large

Instructions

  1. In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Add the chopped artichoke hearts to the skillet and cook for 2-3 minutes until they start to soften.
  4. Add the chopped spinach to the skillet and sauté for another 1-2 minutes until it wilts.
  5. Pour the whisked eggs into the skillet, making sure they spread evenly over the artichokes and spinach.
  6. Cook the omelette for 2-3 minutes until the edges start to set, then gently lift the edges with a spatula to allow the uncooked egg to flow underneath.
  7. Sprinkle the crumbled feta cheese evenly over the top of the omelette.
  8. Fold the omelette in half using the spatula and cook for another 1-2 minutes until the cheese is melted and the eggs are fully cooked.
