Servings: 6
Ingredients
- Potatoes (2 pounds, peeled and cubed)
- Salt (to taste)
- Black pepper (to taste)
- Milk (1/2 cup (or more for desired creaminess))
- Unsalted butter (4 tablespoons)
- Onion (1 large, thinly sliced)
- Bacon (6 slices, chopped)
Instructions
- Place the cubed potatoes in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil over high heat. Once boiling, reduce the heat and let the potatoes simmer until tender, about 20 minutes.
- While the potatoes are cooking, heat a skillet over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Once cooked, remove the bacon and set aside, leaving the rendered bacon grease in the skillet.
- In the same skillet, add the thinly sliced onion. Cook in the bacon grease over medium heat, stirring occasionally, until the onions are caramelized and golden brown, about 10-15 minutes. If the onions start to stick, add a splash of water to deglaze the pan.
- Drain the cooked potatoes and return them to the warm pot. Add the butter and milk, then mash until smooth and creamy. Adjust the milk for desired consistency.
- Fold in the caramelized onions and crumbled bacon. Season generously with salt and pepper to taste, mixing well to combine.
- Serve the mashed potatoes hot, garnished with additional crumbled bacon and a sprinkle of fresh herbs if desired.
