Ingredients

Potatoes
2 pounds, peeled and cubed
Salt
to taste
Black pepper

Milk
1/2 cup (or more for desired creaminess)
Unsalted butter
4 tablespoons
Onion
1 large, thinly sliced
Bacon
6 slices, chopped

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil over high heat. Once boiling, reduce the heat and let the potatoes simmer until tender, about 20 minutes.
  2. While the potatoes are cooking, heat a skillet over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Once cooked, remove the bacon and set aside, leaving the rendered bacon grease in the skillet.
  3. In the same skillet, add the thinly sliced onion. Cook in the bacon grease over medium heat, stirring occasionally, until the onions are caramelized and golden brown, about 10-15 minutes. If the onions start to stick, add a splash of water to deglaze the pan.
  4. Drain the cooked potatoes and return them to the warm pot. Add the butter and milk, then mash until smooth and creamy. Adjust the milk for desired consistency.
  5. Fold in the caramelized onions and crumbled bacon. Season generously with salt and pepper to taste, mixing well to combine.
  6. Serve the mashed potatoes hot, garnished with additional crumbled bacon and a sprinkle of fresh herbs if desired.
