Grilled Balmain Bugs with Garlic Butter

- 1/2 cup Unsalted butter
- 4 cloves, minced Garlic
- 1/4 cup, chopped Fresh parsley
- 1, juiced and zested Lemon

Instructions
- Preheat your grill to high heat.
- Carefully cut the Balmain bugs in half lengthwise and clean out the head cavity, removing any debris.
- In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.
- Remove the saucepan from heat and stir in the chopped parsley, lemon juice, lemon zest, salt, and black pepper. Mix well to combine.
- Generously brush the cut sides of the Balmain bugs with the garlic butter mixture, ensuring some gets into the head cavity as well.
- Place the Balmain bugs on the grill, cut side down, and cook for 4-5 minutes until they start to caramelize.
- Flip the Balmain bugs over and brush with additional garlic butter. Cook for another 4-5 minutes, or until the meat is opaque and cooked through.
- Once cooked, remove the Balmain bugs from the grill and drizzle any remaining garlic butter over the top before serving.
