Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the mashed ripe bananas and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the banana mixture, alternating with the milk. Mix until just combined; do not overmix.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the Bananas Foster topping. In a skillet over medium heat, melt the 1/4 cup of unsalted butter.
  9. Once melted, add the brown sugar and stir until dissolved. Add the sliced bananas and cook for 2-3 minutes, until they are softened.
  10. Carefully add the dark rum to the skillet and ignite with a long match or lighter. Allow the flames to burn out—this gives the sauce a wonderful depth of flavor.
  11. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
  12. Once the cake has cooled, pour the Bananas Foster topping over the cake, spreading it evenly to cover the top.
