Servings: 8

Ingredients

  • All-purpose flour (3 cups)
  • Active dry yeast (2 teaspoons)
  • Sugar (2 tablespoons)
  • Warm water (1 cup (110°f / 43°c))
  • Salt (1/2 teaspoon)
  • Ground pork (1 pound)
  • Diced shiitake mushrooms (1 cup)
  • Diced onion (1 small)
  • Soy sauce (2 tablespoons)
  • Oyster sauce (1 tablespoon)
  • Sesame oil (1 teaspoon)
  • Black pepper (1/2 teaspoon)
  • Beaten egg (1 (for brushing))
  • Sliced green onions (2 tablespoons (for garnish))

Instructions

  1. In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5 minutes, or until it becomes foamy, indicating the yeast is activated.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and pour in the yeast mixture. Stir until a dough begins to form.
  3. Transfer the dough to a lightly floured surface and knead for approximately 5 minutes, or until the dough is smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until it has doubled in size.
  4. Meanwhile, in a skillet over medium heat, cook the ground pork until it is browned. Add the diced shiitake mushrooms, onion, soy sauce, oyster sauce, sesame oil, salt, and black pepper. Cook for an additional 5 minutes, or until the vegetables are tender. Remove from heat and allow the filling to cool.
  5. Once the dough has risen, punch it down and divide it into 8 equal portions. Roll each portion into a circle approximately 4 inches in diameter.
  6. Place a generous spoonful of the pork filling in the center of each dough circle. Gather the edges of the dough and pinch them together to seal, forming a bun shape.
  7. Place the buns on individual squares of parchment paper and arrange them in a steamer basket. Allow them to rise for another 15 minutes.
  8. Steam the buns over high heat for 15-20 minutes, or until they are cooked through and fluffy.
  9. Brush the tops of the buns with the beaten egg and sprinkle with sliced green onions before serving.
  10. Serve the Banh Bao warm and enjoy the rich flavors that come together in each bite!
