
Bottom Round

Ingredients
- Water (2 tablespoons)
- Cornstarch (2 tablespoons)
- Salt and pepper (to taste)
- Dried thyme (1 teaspoon)
- Dijon mustard (1 tablespoon)
- Worcestershire sauce (2 tablespoons)
- Beef broth (1 cup)
- Garlic (4 cloves, minced)
- Onion (1 large, sliced)
- Bottom round roast (3 pounds)
Instructions
- Season the bottom round roast with salt and pepper.
- Heat a large skillet over medium-high heat and sear the roast on all sides until browned.
- Transfer the roast to a slow cooker and add the sliced onion and minced garlic.
- In a small bowl, whisk together the beef broth, Worcestershire sauce, Dijon mustard, dried thyme, salt, and pepper.
- Pour the mixture over the roast in the slow cooker.
- Cover and cook on low heat for 8 hours, or until the roast is tender and easily shreds with a fork.
- In a separate small bowl, mix together the cornstarch and water to create a slurry.
- Remove the roast from the slow cooker and set aside.
- Pour the liquid from the slow cooker into a saucepan and bring to a boil.
- Slowly whisk in the cornstarch slurry and continue to cook until the sauce thickens.
- Slice the bottom round roast and serve with the thickened sauce.
