Ingredients

Salt
1 teaspoon, adjust to taste
Black pepper
1/2 teaspoon, adjust to taste
Fresh cilantro
1/4 cup, chopped, plus more for garnish
Sour cream
1/2 cup
Lime
1, juiced
Avocado
1, ripe
Tortillas
8, small size
Black beans
1 can (15 ounces), drained and rinsed
Cinnamon
1/2 teaspoon
Brown sugar
1/4 cup
Sweet potatoes
2 large, diced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes, brown sugar, cinnamon, salt, and pepper. Toss until the sweet potatoes are well coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet. Bake for 20-25 minutes, or until the sweet potatoes are tender and caramelized.
  4. While the sweet potatoes are baking, prepare the avocado-lime crema. In a small bowl, mash the ripe avocado. Mix in the lime juice, sour cream, chopped cilantro, salt, and pepper. Adjust seasonings to taste.
  5. Warm the tortillas in a dry skillet over medium heat or in the microwave for 15 seconds.
  6. To assemble the tacos, spread a generous spoonful of the avocado-lime crema on each warm tortilla. Top each with a scoop of the candied sweet potatoes and black beans.
