Candied Sweet Potato Tacos with Avocado-Lime Crema

Ingredients
- Salt
- 1 teaspoon, adjust to taste
- Black pepper
- 1/2 teaspoon, adjust to taste
- Fresh cilantro
- 1/4 cup, chopped, plus more for garnish
- Sour cream
- 1/2 cup
- Lime
- 1, juiced
- Avocado
- 1, ripe
- Tortillas
- 8, small size
- Black beans
- 1 can (15 ounces), drained and rinsed
- Cinnamon
- 1/2 teaspoon
- Brown sugar
- 1/4 cup
- Sweet potatoes
- 2 large, diced
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes, brown sugar, cinnamon, salt, and pepper. Toss until the sweet potatoes are well coated.
- Spread the sweet potatoes in a single layer on a baking sheet. Bake for 20-25 minutes, or until the sweet potatoes are tender and caramelized.
- While the sweet potatoes are baking, prepare the avocado-lime crema. In a small bowl, mash the ripe avocado. Mix in the lime juice, sour cream, chopped cilantro, salt, and pepper. Adjust seasonings to taste.
- Warm the tortillas in a dry skillet over medium heat or in the microwave for 15 seconds.
- To assemble the tacos, spread a generous spoonful of the avocado-lime crema on each warm tortilla. Top each with a scoop of the candied sweet potatoes and black beans.
- Garnish each taco with additional cilantro, if desired. Serve the tacos warm and enjoy!
