- Vegetable oil
- 2 tablespoons

- Fresh cilantro
- 1/4 cup, finely chopped
- Green peas
- 1 cup, fresh or frozen
- Tomatoes
- 2, medium-sized, diced
- Coconut milk
- 400ml, full-fat
- Coriander powder
- 1 teaspoon
- Cumin powder
- 1 teaspoon
- Turmeric powder
- 1/2 teaspoon
- Curry powder
- 2 teaspoons
- Ginger
- 1 inch piece, freshly grated
- Garlic
- 3 cloves, minced
- Onion
- 1, large, finely chopped
- Cauliflower
- 1, medium-sized, cut into florets
Instructions
- In a large pan, heat 2 tablespoons of vegetable oil over medium heat.
- Add the finely chopped onion to the pan, cooking until it becomes translucent, about 5 minutes.
- Stir in the minced garlic and freshly grated ginger, cooking for another 2 minutes, until aromatic.
- Add the curry powder, turmeric, cumin, and coriander, stirring well to coat the onions with the spices.
- Next, add the cauliflower florets and diced tomatoes to the pan. Mix well to combine.
- Pour in the full-fat coconut milk and bring the mixture to a simmer. Cover the pan and let it cook for about 15 minutes, or until the cauliflower becomes tender.
- Stir in the green peas, cooking for an additional 5 minutes.
- Season the curry with salt, adjusting to your preference.
- Garnish the curry with a sprinkle of fresh cilantro before serving.
- To complete your meal, serve the cauliflower curry hot over steamed rice or with warm naan bread.
