Vegetable oil
2 tablespoons
Salt
to taste
Fresh cilantro
1/4 cup, finely chopped
Green peas
1 cup, fresh or frozen
Tomatoes
2, medium-sized, diced
Coconut milk
400ml, full-fat
Coriander powder
1 teaspoon
Cumin powder
1 teaspoon
Turmeric powder
1/2 teaspoon
Curry powder
2 teaspoons
Ginger
1 inch piece, freshly grated
Garlic
3 cloves, minced
Onion
1, large, finely chopped
Cauliflower
1, medium-sized, cut into florets

Instructions

  1. In a large pan, heat 2 tablespoons of vegetable oil over medium heat.
  2. Add the finely chopped onion to the pan, cooking until it becomes translucent, about 5 minutes.
  3. Stir in the minced garlic and freshly grated ginger, cooking for another 2 minutes, until aromatic.
  4. Add the curry powder, turmeric, cumin, and coriander, stirring well to coat the onions with the spices.
  5. Next, add the cauliflower florets and diced tomatoes to the pan. Mix well to combine.
  6. Pour in the full-fat coconut milk and bring the mixture to a simmer. Cover the pan and let it cook for about 15 minutes, or until the cauliflower becomes tender.
  7. Stir in the green peas, cooking for an additional 5 minutes.
  8. Season the curry with salt, adjusting to your preference.
  9. Garnish the curry with a sprinkle of fresh cilantro before serving.
  10. To complete your meal, serve the cauliflower curry hot over steamed rice or with warm naan bread.
