  • Green peas (1 cup, fresh or frozen)
  • Tomatoes (2, medium-sized, diced)
  • Coconut milk (400ml, full-fat)
  • Coriander powder (1 teaspoon)
  • Cumin powder (1 teaspoon)
  • Turmeric powder (1/2 teaspoon)
  • Curry powder (2 teaspoons)
  • Ginger (1 inch piece, freshly grated)
  • Garlic (3 cloves, minced)
  • Onion (1, large, finely chopped)
  • Cauliflower (1, medium-sized, cut into florets)

Instructions

  1. In a large pan, heat 2 tablespoons of vegetable oil over medium heat.
  2. Add the finely chopped onion to the pan, cooking until it becomes translucent, about 5 minutes.
  3. Stir in the minced garlic and freshly grated ginger, cooking for another 2 minutes, until aromatic.
  4. Add the curry powder, turmeric, cumin, and coriander, stirring well to coat the onions with the spices.
  5. Next, add the cauliflower florets and diced tomatoes to the pan. Mix well to combine.
  6. Pour in the full-fat coconut milk and bring the mixture to a simmer. Cover the pan and let it cook for about 15 minutes, or until the cauliflower becomes tender.
  7. Stir in the green peas, cooking for an additional 5 minutes.
  8. Season the curry with salt, adjusting to your preference.
