- 2, julienned Carrots
- 1 cup Bean sprouts

- 1/4 cup, chopped Cilantro
- 1, juiced Lime
- 3 tablespoons Fish sauce
- 3 tablespoons Soy sauce

Instructions
- Cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the sliced pork loin and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the pork from the skillet and set aside.
- In the same skillet, add the shrimp and cook for about 3-4 minutes until they turn pink and are cooked through. Remove from the skillet and set aside.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Then add the julienned carrots and cook for 2-3 minutes until slightly softened.
- Add the bean sprouts and chopped green onions to the skillet and cook for another 2 minutes, stirring frequently to combine.
- In a small bowl, whisk together the soy sauce, fish sauce, sugar, and lime juice to create the sauce.
- Pour the sauce over the vegetable mixture in the skillet and stir to combine thoroughly.
- Add the cooked pork loin, shrimp, and drained egg noodles to the skillet. Toss everything together until well coated in the sauce and heated through, about 2-3 minutes.
- Remove from heat and garnish with chopped cilantro and crushed roasted peanuts.
- Serve hot, with additional lime wedges on the side for squeezing over the dish.
