Servings: 4

Ingredients

Chicken
1.5 lbs, cut into bite-sized pieces
Onion
1 large, finely chopped
Garlic
4 cloves, minced
Ginger
1 tablespoon, grated
Coconut milk
1 can (13.5 oz)
Diced tomatoes
1 can (14.5 oz)
Curry powder
2 tablespoons
Turmeric
1 teaspoon
Cumin
1 teaspoon
Coriander
1 teaspoon
Cayenne pepper
1/2 teaspoon (adjust to taste)
Salt
to taste
Lemon juice
2 tablespoons
Fresh cilantro
for garnish
Oil
2 tablespoons (for cooking)

Instructions

  1. In a large pan, heat the oil over medium heat. Once hot, add the chopped onion and sauté until golden brown, about 5-7 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Add the chicken pieces to the pan, cooking until they are browned on all sides, about 8-10 minutes.
  4. In a small bowl, mix together the curry powder, turmeric, cumin, coriander, and cayenne pepper.
  5. Sprinkle the spice mixture over the chicken and stir well to coat each piece evenly.
  6. Pour in the coconut milk and diced tomatoes, stirring to combine all the ingredients.
  7. Cover the pan and reduce the heat to low. Let the curry simmer for 30 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
  8. Once cooked, stir in the lemon juice and season with salt to taste.
  9. Garnish with fresh cilantro before serving.
  10. Serve hot with steamed rice or naan bread for an authentic experience.
