Servings: 4

Ingredients

Chicken breasts
4, boneless and skinless
Eggs
2, beaten
Breadcrumbs
1 cup, italian-style
Parmesan cheese
1/2 cup, grated
Italian seasoning
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Olive oil
1/4 cup
Marinara sauce
2 cups, store-bought or homemade
Mozzarella cheese
1 cup, shredded
Fresh basil
1/4 cup, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, beat the eggs with a fork until well mixed.
  3. In another shallow dish, combine the breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, and black pepper. Mix well.
  4. Take each chicken breast and dip it into the beaten eggs, allowing any excess to drip off.
  5. Next, coat the chicken in the breadcrumb mixture, pressing gently to ensure an even coating.
  6. In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 3-4 minutes on each side, or until they are golden brown.
  7. Transfer the cooked chicken breasts to a baking dish. Spoon marinara sauce generously over each piece, then sprinkle with shredded mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  9. Remove from the oven and garnish with fresh chopped basil before serving.
