Instructions
- Preheat your oven to 375°F (190°C).
- In a shallow dish, beat the eggs with a fork until well mixed.
- In another shallow dish, combine the breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, and black pepper. Mix well.
- Take each chicken breast and dip it into the beaten eggs, allowing any excess to drip off.
- Next, coat the chicken in the breadcrumb mixture, pressing gently to ensure an even coating.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 3-4 minutes on each side, or until they are golden brown.
- Transfer the cooked chicken breasts to a baking dish. Spoon marinara sauce generously over each piece, then sprinkle with shredded mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh chopped basil before serving.
Tips
- For a spicy twist, add red pepper flakes to the breadcrumb mixture.
- Serve with a side of spaghetti for a complete Italian feast.
- Using homemade marinara sauce can elevate the dish; simply simmer crushed tomatoes, garlic, onions, and herbs for a fresh flavor.
