Instructions
- In a large bowl, combine the flour, baking powder, and salt. Mix well.
- In another bowl, beat together the milk, egg, and vegetable oil.
- Pour the wet mixture into the flour mixture and stir until just combined. Be careful not to overmix as it can result in tough pancakes.
- In a small bowl, create your cinnamon swirl by mixing the cinnamon and brown sugar.
- In another bowl, prepare the frosting by beating the cream cheese, powdered sugar, and vanilla extract until creamy and smooth.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with a little butter or oil.
- Pour 1/4 cup of pancake batter onto the skillet. Immediately sprinkle a spoonful of the cinnamon-sugar mixture onto each pancake and lightly swirl it into the batter using a toothpick or skewer.
- Cook the pancakes for 2-3 minutes on each side or until they're golden brown and the batter is fully cooked.
- Serve your pancakes warm, topped with a generous dollop of cream cheese frosting and a drizzle of melted butter. Enjoy this treat as a delightful start to your day or a sweet brunch indulgence.
Tips
- To ensure a smooth swirl, make sure your brown sugar is free of clumps before mixing it with the cinnamon.
- Try not to flip the pancakes more than once, as it can make them tough and rubbery.
- For an extra indulgent treat, you can also add a sprinkle of chocolate chips or chopped nuts to the batter before cooking.
