Cinnamon Roll Pancakes

These delicious cinnamon roll pancakes combine the flavors of a cinnamon roll with the fluffy texture of pancakes.

Ingredients

  • Butter (2 tablespoons, melted)
  • Vanilla extract (1 teaspoon)
  • Powdered sugar (1/2 cup)
  • Cream cheese (4 ounces, softened)
  • Brown sugar (1/4 cup)
  • Cinnamon (2 teaspoons)
  • Vegetable oil (2 tablespoons)
  • Egg (1)
  • Milk (1 1/4 cups)
  • Salt (1/2 teaspoon)
  • Baking powder (2 teaspoons)
  • All (purpose flour - 1 1/2 cups)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and vegetable oil.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. In a small bowl, mix together the cinnamon and brown sugar.
  5. In another small bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  7. Pour 1/4 cup of batter onto the skillet for each pancake.
  8. Sprinkle a spoonful of the cinnamon-sugar mixture onto each pancake and swirl it into the batter with a toothpick or skewer.
  9. Cook the pancakes for 2-3 minutes on each side, or until golden brown.
  10. Serve the pancakes with a dollop of the cream cheese frosting and a drizzle of melted butter.
