
Cinnamon Roll Pancakes

Ingredients
- Butter (2 tablespoons, melted)
- Vanilla extract (1 teaspoon)
- Powdered sugar (1/2 cup)
- Cream cheese (4 ounces, softened)
- Brown sugar (1/4 cup)
- Cinnamon (2 teaspoons)
- Vegetable oil (2 tablespoons)
- Egg (1)
- Milk (1 1/4 cups)
- Salt (1/2 teaspoon)
- Baking powder (2 teaspoons)
- All (purpose flour - 1 1/2 cups)
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix together the cinnamon and brown sugar.
- In another small bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Sprinkle a spoonful of the cinnamon-sugar mixture onto each pancake and swirl it into the batter with a toothpick or skewer.
- Cook the pancakes for 2-3 minutes on each side, or until golden brown.
