Servings: 4

Ingredients

  • All-purpose flour (1 cup)
  • Milk (1 cup)
  • Eggs (3 large)
  • Unsalted butter (4 tablespoons)
  • Salt (1/2 teaspoon)
  • Vanilla extract (1 teaspoon)
  • Fresh berries (1 cup (mixed strawberries, blueberries, raspberries))
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a blender, combine the all-purpose flour, milk, eggs, vanilla extract, and salt. Blend on high until the mixture is smooth and frothy, about 30 seconds.
  3. Place the unsalted butter in a 10-inch cast iron skillet or an oven-safe pan. Place the skillet in the preheated oven for about 5 minutes, until the butter is melted and the skillet is hot, ensuring the butter does not brown.
  4. Carefully remove the hot skillet from the oven using oven mitts and immediately pour the batter into the skillet over the melted butter.
  5. Return the skillet to the oven and bake for 15-20 minutes, or until the pancake has puffed up and is golden brown around the edges.
  6. Once baked, remove the Dutch Baby Pancake from the oven and allow it to cool for a few minutes. It will deflate slightly as it cools.
  7. Dust the pancake generously with powdered sugar and serve warm, topped with fresh berries.
