Instructions
- Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse them under cold water to stop the cooking process.
- Remove the outer skin from the fava beans by gently squeezing each bean. Discard the skins and set the beans aside.
- Preheat your oven to 350°F (175°C).
- Arrange the baguette slices on a baking sheet. Brush both sides with olive oil and bake for 5-7 minutes, or until they are golden and crispy.
- In a mixing bowl, combine the shelled fava beans, minced garlic, chopped mint leaves, lemon juice, olive oil, salt, and pepper. Mash the mixture lightly with a fork, leaving some whole beans for texture.
- Spread a generous layer of the fava bean mixture onto each toasted baguette slice.
- Garnish with additional mint leaves for an extra pop of color and flavor.
- Serve immediately as a refreshing appetizer or snack.
Tips
- For a spicy twist, add a pinch of red pepper flakes to the fava bean mixture.
- Try substituting the fava beans with peas for a different flavor profile.
- These crostini can be prepared in advance; just store the fava bean mixture in the fridge and assemble the crostini just before serving.
