Ingredients

Fava beans
2 cups, shelled
Garlic
2 cloves, minced
Fresh mint leaves
1/4 cup, chopped
Lemon juice
2 tablespoons, freshly squeezed
Olive oil
3 tablespoons, plus more for brushing
Baguette
1, sliced into 1/2-inch pieces
Salt
to taste
Black pepper
to taste

Instructions

  1. Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse them under cold water to stop the cooking process.
  2. Remove the outer skin from the fava beans by gently squeezing each bean. Discard the skins and set the beans aside.
  3. Preheat your oven to 350°F (175°C).
  4. Arrange the baguette slices on a baking sheet. Brush both sides with olive oil and bake for 5-7 minutes, or until they are golden and crispy.
  5. In a mixing bowl, combine the shelled fava beans, minced garlic, chopped mint leaves, lemon juice, olive oil, salt, and pepper. Mash the mixture lightly with a fork, leaving some whole beans for texture.
  6. Spread a generous layer of the fava bean mixture onto each toasted baguette slice.
