  • Paprika (1 teaspoon)
  • Saffron threads (a pinch)
  • Fish or seafood stock (1 liter)
  • Mixed seafood (shrimp, mussels, calamari, etc.) (1.5 kilograms)
  • Salt and pepper (to taste)
  • Fresh parsley (a handful, finely chopped)
  • Lemon wedges (to serve)

Instructions

  1. Heat the olive oil in a large paella pan or wide skillet over medium heat.
  2. Add the fideos and toast them until they turn a golden brown. Stir frequently to ensure even toasting and prevent burning, this should take about 5 minutes.
  3. Move the toasted fideos to one side of the pan. On the other side, add the chopped onion, minced garlic, diced red bell pepper, and diced tomato. Sauté the vegetables until they soften, which should take about 5 minutes.
  4. Mix the sautéed vegetables with the toasted fideos. Sprinkle the mixture with paprika and a pinch of saffron threads, stirring well to distribute the flavors evenly.
  5. Pour in the fish or seafood stock and simmer the mixture for about 10 minutes. Stir occasionally to ensure the fideos cook evenly.
  6. Add the mixed seafood to the pan. Season with salt and pepper to your preference. Cook for another 10-15 minutes, or until the seafood is thoroughly cooked and the fideos are tender.
  7. Remove the pan from the heat and let the fideuà rest for a few minutes to allow the flavors to meld together.
