Fig and Balsamic Glazed Figs

Ingredients
- Fresh figs (12, stems trimmed)
- Balsamic vinegar (1/4 cup)
- Honey (2 tablespoons)
- Fresh thyme (1 tablespoon, chopped)
- Goat cheese (4 ounces, crumbled)
- Walnuts (1/2 cup, chopped)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the figs by cutting a small cross at the top of each fig, about halfway down. This will help them open up and absorb the glaze.
- In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat and cook for 2-3 minutes, stirring occasionally, until slightly thickened.
- Place the figs in a baking dish and drizzle the balsamic glaze over them, making sure to fill the cross cuts for maximum flavor.
- Sprinkle the chopped thyme evenly over the figs.
- Bake in the preheated oven for 10-12 minutes, until the figs are soft and the glaze is caramelized.
- Remove from the oven and let cool for a few minutes before serving.
