Ingredients
- White fish fillets (2 cups, such as cod or haddock)
- Salmon fillet (1 cup, skinless and boneless)
- Smoked haddock fillet (1 cup, skinless and boneless)
- Frozen peas (1 cup)
- Carrots (1 cup, diced)
- Butter (4 tablespoons)
- All-purpose flour (1/4 cup)
- Milk (2 cups)
- Salt (to taste)
- Pepper (to taste)
- Fresh dill (2 tablespoons, chopped)
- Mashed potatoes (4 cups, prepared)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large saucepan, bring salted water to a boil. Poach the white fish, salmon, and smoked haddock for about 5 minutes, until just cooked through. Drain and set the fish aside, allowing it to cool slightly before flaking into large pieces.
- In the same saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, ensuring the mixture forms a smooth paste.
- Gradually whisk in the milk until smooth. Continue to cook, stirring constantly, until the sauce thickens and coats the back of a spoon, about 5-7 minutes.
- Add the frozen peas, diced carrots, chopped dill, salt, and pepper to the sauce. Cook for an additional 5 minutes, until the vegetables are tender and vibrant.
- Gently fold the flaked fish into the sauce, being careful not to break it up too much.
- Transfer the fish and sauce mixture into a greased baking dish, spreading it evenly.
- Top the filling with prepared mashed potatoes, smoothing it out with a spatula. Optionally, create peaks and valleys in the potatoes for extra crispiness.
- Bake in the preheated oven for 25-30 minutes, or until the pie is bubbling and the top is golden brown.
- Serve hot and enjoy the warmth and comfort of this classic dish!
