Ingredients

White fish fillets
2 cups, such as cod or haddock
Salmon fillet
1 cup, skinless and boneless
Smoked haddock fillet
1 cup, skinless and boneless
Frozen peas
1 cup
Carrots
1 cup, diced
Butter
4 tablespoons
All-purpose flour
1/4 cup
Milk
2 cups
Salt
to taste
Pepper
to taste
Fresh dill
2 tablespoons, chopped
Mashed potatoes
4 cups, prepared

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large saucepan, bring salted water to a boil. Poach the white fish, salmon, and smoked haddock for about 5 minutes, until just cooked through. Drain and set the fish aside, allowing it to cool slightly before flaking into large pieces.
  3. In the same saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, ensuring the mixture forms a smooth paste.
  4. Gradually whisk in the milk until smooth. Continue to cook, stirring constantly, until the sauce thickens and coats the back of a spoon, about 5-7 minutes.
  5. Add the frozen peas, diced carrots, chopped dill, salt, and pepper to the sauce. Cook for an additional 5 minutes, until the vegetables are tender and vibrant.
  6. Gently fold the flaked fish into the sauce, being careful not to break it up too much.
  7. Transfer the fish and sauce mixture into a greased baking dish, spreading it evenly.
  8. Top the filling with prepared mashed potatoes, smoothing it out with a spatula. Optionally, create peaks and valleys in the potatoes for extra crispiness.
