Gamjatang (Spicy Korean Pork Bone Soup)
Gamjatang is a hearty and flavorful Korean soup that warms the soul. Known as 'potato soup' in Korean, this dish features tender pork bones simmered to perfection, infused with aromatic ginger and garlic, and enriched with the bold heat of gochujang. The addition of potatoes and green onions adds a delightful texture and freshness. Ingredients
- 2 pounds, preferably neck or back bones Pork bones
- 8 cups Water
- 1 large, quartered Onion
- 6 cloves, minced Garlic
- 1-inch piece, sliced Ginger
- 3 medium, peeled and cut into chunks Potatoes
- 3 tablespoons Gochujang (Korean red pepper paste)
- 2 tablespoons Soy sauce
- 1 tablespoon Sesame oil
- to taste Salt
- to taste Black pepper
- 4, chopped (for garnish) Green onions

Instructions
- In a large pot, place the pork bones and cover them with enough water. Bring to a boil for about 5 minutes to remove impurities. Drain the bones and rinse them under cold water.
- Return the cleaned pork bones to the pot with 8 cups of fresh water, then add the quartered onion, minced garlic, and sliced ginger. Bring the mixture to a vigorous boil, then reduce the heat to low and let it simmer for 1 hour, skimming any foam or impurities that rise to the surface.
- After an hour, add the chopped potatoes, gochujang, soy sauce, and salt. Stir well to incorporate the gochujang into the broth. Continue to simmer for another 30 minutes, or until the potatoes are tender and the meat is falling off the bones.
- Once cooked, stir in the sesame oil and adjust the seasoning with black pepper to your liking.
- Serve the Gamjatang hot, garnished with chopped green onions for a fresh touch.
Tips
- For a richer flavor, you can roast the pork bones in the oven at 400°F (200°C) for 30 minutes before boiling them.
- If you prefer a spicier soup, feel free to add more gochujang or even some sliced fresh chili peppers.
- Gamjatang is often served with a side of steamed rice and kimchi for a complete meal.
